Recipe
I stand by this one without modification. Family pleaser.
Servings: 1 loaf
Ingredients
- Butter
- Lemon pepper
- Wings
Steps
Sauce
- Stir lemon pepper and 2 tbsp lemon juice into 1/4 cup melted butter
- Stir 1 tsp of lemon pepper seasoning to 2 tbsp olive oil
- Zest 4 lemons, bake zest for 15-20 minutes then crush into powder, place 1 and 1/2 tablespoons of dried zest in a bowl and add pepper, salt, garlic powder, and onion powder. Drizzle chicken lightly with olive oil, toss with 1 tsp lemon pepper. Melt butter into large pot. Stir in pepper, salt, onion powder, garlic powder, and lemon juice then toss in the chicken.
- Lemon juice makes melted butter clump, so if making lemon butter, add the lemon right before you need it.
Wings
- Fry wings in hot oil with a high smoking point over medium high heat for about 8 minutes until chicken is no longer pink and the juices run clear.
- Twice-fry them for extra-juicy insides and extra-crispy outsides: fry them once at a lower temperature then again at a higher temperature. First for 25-30 minutes in 250-275 degree oil, let wings cool completely, then fry in the same oil at 400 degrees to crisp up the outside for 10 minutes. You can stop after the first for preparing ahead of time.
- Toss wings in oil and bake at 375 degrees for 55 minutes or 400 degrees for 50 minutes or something on a sheet or wire rack.
- Air fry at 350 degrees for 24 minutes, turning half way through the cook time
Serving
- Toss hot wings in 1 tsp of lemon pepper mixed with oil, coating all sides
- Sprinkle with parsley
